Skinny Mexican Casserole


At only 300 calories per serving (without sour cream, salsa, or guac), this casserole makes it easy to stay on your diet. It is also super easy to whip up, and my whole family loved it!

Ingredients:

1 (10 oz) bag of frozen brown rice

1 (12 oz) bag of frozen sweet corn

1 (16 oz) can of black beans, drained

1 1/2 cups cooked chicken breast (shredded)

20 oz Las Palmas enchilada sauce

1 1/2 cups chopped red pepper

1/4 cup chopped green onion

2 cups shredded cheddar cheese

1/4 teaspoon chipotle chili powder

1/4 teaspoon salt

1/4 teaspoon paprika

1/4 teaspoon ground black pepper

1/4 teaspoon ground cumin

guacamole, sour cream, and salsa for topping (optional, but not really)


Steps:

1. preheat oven to 375 degrees Fahrenheit.

2. Season shredded chicken with paprika, black pepper, and cumin.

3. Combine remaining spices.

4. Spray a 13 by 9 inch oven safe dish with cooking spray.

5. In dish, combine all remaining ingredients until evenly distributed (except for toppings).

6. Bake uncovered for 30-40 minutes, or until the top is golden brown.

7. Remove from oven and allow to cool for 5-10 minutes, then top and enjoy!
