Easy Matcha Cookies

Combine all dry ingredients except for the sugar.

In a separate bowl, cream the butter and sugar. Once combined, add in milk, egg, and vanilla.

Incorporate wet ingredients into dry ingredients in thirds. Bake in an oven preheated to 375 degrees for 10-12 minutes or until cookies begin to brown slightly at the edges. Allow to cool and enjoy warm!


Ingredients:

2 3/4 cups all purpose flour (add an extra tablespoon at high altitude)

1 teaspoon baking soda (half for high altitude)

1/2 teaspoon baking powder (half for high altitude)

2 1/2 tablespoons matcha powder from Zulay Kitchen (https://bit.ly/33Wer0S)

1/4 teaspoon salt

1 cup salted butter, softened

1 1/2 cups granulated sugar

1 egg

2-4 tablespoons 2% milk

1 teaspoon vanilla extract


Steps:

  1. Preheat your oven to 375 degrees.

  2. In a large bowl, combine flour, baking soda, baking powder, matcha, and salt.

  3. In a separate bowl, cream butter and sugar. Once fully combined, add milk, egg, and vanilla.

  4. Incorporate wet ingredients into dry ingredients in thirds. Bake in preheated oven for 10-12 minutes or until cookies begin to brown slightly at the edges. Allow to cool for 10-15 minutes. Enjoy!

Note* I paired my matcha cookies with coconut almond milk topped with whipped matcha. To make the whipped matcha, whip heavy whipping cream into stiff peaks, and add in matcha and powdered sugar to taste. To serve, pour ice and coconut almond milk (or any other milk) into a glass and top with whipped matcha.
