With Halloween barely over, we all of an absurd amount of candy lying around, and these cookies are the perfect way to use up some candy.
I used butterfingers, rolos, m and m’s, reese’s, snickers, and candy corn, but you can easily switch these out for other candies.
I actually got my inspiration for these cookies on instagram, but when I tried to find any recipes there weren't any! I decided I had to make a recipe! This recipe is adapted from togetherasafamily.com so check out their page out if you have the chance!
Ingredients:
1 1/2 cups all purpose flour
3/4 teaspoon baking soda (cut this in half for high altitude baking)
1/4 teaspoon salt
1 cup rolled oats
1/2 cup softened butter (1 stick)
1/3 cup peanut butter
1/2 cup granulated sugar
1/2 cup brown sugar (light or dark)
1 teaspoon vanilla extract
1 large egg
1 large egg yolk
Desired amount of chopped candy bars (around 2 1/2 cups) (I used butterfingers, Reese's baking mix of Reese's pieces and mini peanut butter cups, rolos, snickers, m and m's, and candy corn)
Steps:
1. Preheat the oven to 350 degrees Fahrenheit
2. In a medium bowl, combine flour, baking soda, salt, and oats, until thoroughly combined.
3. In a large bowl of an electric mixer fitted with a paddle attachment, mix the butter, peanut butter, brown sugar, and sugar on medium speed until fluffy (2-3 minutes)
4. Mix in the vanilla, egg, and egg yolk.
5. Slowly pour the dry ingredients into the wet ingredients, and stir until combined.
6. Split the candy into two parts, one for topping and one for baking into the cookies.
7. Cut the candy set aside for baking into the cookies into small pieces, and stir into the dough.
8. Line baking sheets with parchment paper, and scoop the dough into small balls on the sheet.
9. Bake in preheated oven for 8-10 minutes, being careful not to overcook.
10. While the cookies bake, cut the remaining candy into slightly larger chunks.
11. Remove the cookies from the oven, and immediately press candy onto the cookies.
12. Cool for 10 minutes, then enjoy!
