Fruit Tart with Cherry Lime Drizzle

A fruit tart is the perfect way to kick off summer. With fresh berries, a creamy vanilla almond filling, and a zingy cherry lime drizzle this tart tastes just like summer!


Ingredients:

for the crust:

3/4 cup powdered sugar

12 tablespoons butter (mostly melted)

1 1/2 cups all purpose flour

pinch of salt

for the filling:

1 8-ounce package cream cheese

1/2 cup white sugar

3/4 teaspoon vanilla extract

3/4 teaspoon almond extract

4-8 strawberries, sliced

1/3 cup blueberries

1/3 cup raspberries

for the cherry lime drizzle (optional):

3 tablespoons lime flavoring (I used a lime Monin syrup)

3/4 tablespoon cherry flavoring (I used a tart cherry Monin syrup)

1 tablespoon cornstarch

1/8 cup sugar


Steps:

for the crust:

  1. Preheat the oven to 350 degrees Fahrenheit.

  2. Combine all crust ingredients and mix until smooth.

  3. Press the dough into a 12-inch tart pan and spread evenly.

  4. Bake the crust in the preheated oven for 10-15 minutes or until crust begins to brown slightly.

  5. Remove crust from oven and allow to cool thoroughly before filling.

for the filling:

  1. Mix all the filling ingredients until smooth and spread evenly on the crust.

  2. Arrange fruit on top in whatever design you want. Feel free to use other fruits besides strawberries, blueberries, and raspberries.

  3. Place tart in the refrigerator while preparing the cherry lime topping.

for the cherry lime drizzle (optional):

  1. Combine all the remaining ingredients in a medium saucepan and bring to a boil. Keep at a boil for about three minutes. The sugar should fully dissolve and the mixture should be bubbling.

  2. Remove from heat and allow to cool for about fifteen minutes.

  3. Once the syrup is cooled, use a spoon to drizzle over tart.

  4. Place tart in the fridge to chill. Allow tart to sit at room temperature for five to ten minutes before serving. Enjoy!
