This super quick and easy bruschetta recipe can be quickly whipped up for any occasion. It makes a great appetizer, snack, or even a light main course. My whole family loves this recipe and the five of us can easily eat this whole recipe in one serving.
Ingredients:
6 campari tomatoes
2 tablespoons chopped basil leaves
1 tablespoon chopped sweet mint
2 teaspoons chopped rosemary
1 teaspoon thyme
1 teaspoon chopped oregano
2 tablespoons parmesan cheese
1 teaspoon salt (and more for sprinkling over bread)
2 teaspoons black pepper (and more for sprinkling over bread)
2 tablespoons balsamic vinegar (and more for drizzling over bread)
2 teaspoons olive oil (and more for drizzling over bread)
1/2 loaf french bread (other breads can be used as well)
Note* If you do not have all the herbs listed the recipe will still taste good. It just won't have quite as many flavors.
Steps:
Chop tomatoes finely.
Combine tomatoes with herbs, salt, pepper, balsamic vinegar, olive oil, and parmesan. Mix until combined then cover and refrigerate.
Heat your oven to a broil. While the oven heats up, slice the bread.
Arrange bread slices onto a cookie sheet, drizzle lightly with balsamic vinegar and olive oil, and sprinkle lightly with salt and pepper. Toast bread until it begins to brown.
Let bread cool slightly then top with tomato mixture and enjoy!
