I think everyone loves (or should love) cake pops. What's not to love about these adorable desserts? They combine chocolate and peppermint into a bitesized portion, and make a perfect holiday treat!
It's also super easy to make, and only takes about 20-30 minutes of working time. All there is to this recipe is to bake a cake, using boxed cake mix, whip up a batch of frosting, and decorating!
Ingredients:
1 box boxed cake mix along with ingredients necessary to make it (I used Duncan Heines Devil's Food)
For the frosting:
1/2 cup melted butter
1/2 cup cocoa powder
3 cups powdered sugar
1/3 cup milk
1 tsp vanilla extract
Decoration:
1 1/2 cups semisweet chocolate chips
4 crushed candy canes
cake pop sticks (about 40)
small clear bags (about 40)
Steps:
1. Bake cake according to directions on package, allow to cool.
2. For the frosting: Combine melted butter and cocoa powder in a medium sized bowl.
3. Add in powdered sugar and milk, alternating between the two and mixing thoroughly after adding each ingredient.
4. Mix in the vanilla.
5. Crumble cooled cake into the frosting. Mix until no chunks of cake or frosting remain. As shown in the image below.
6. Place cake dough into the freezer for 15-20 minutes, or until chilled enough to easily work with.
7. Line two baking sheets with parchment paper.
8. Microwave chocolate chips for 50 seconds, or until melted.
9. Roll dough into small balls, then dip into the melted chocolate, using a spoon to coat completely. Place onto baking sheet, immediately inserting the cake pop stick and sprinkling crushed candy canes over the top.
10. Repeat until no dough remains.
11. Chill cake pops until the chocolate coating hardens, then place into small bags.
12. Enjoy! :)
