Berry Orange Loaf with Orange Poppy Seed Glaze


Ingredients:

2 cups all purpose flour

3/4 cup granulated sugar ( plus 1 additional tbsp for topping)

2 tsp baking powder (reduce by half for high altitude)

3/4 tsp salt

1/2 tsp baking soda (reduce by half for high altitude)

2 tbsp olive oil

2 tsp vanilla extract

1/3 cup fresh blueberries

1/4 cup dried cranberries or blueberries (I used half of each)

1/3 cup white chocolate chips

1 tablespoon orange zest

1/2 cup fresh squeezed orange juice

1/2 cup 2% milk

Orange Poppy Seed Glaze:

1 cup powdered sugar

juice of half an orange

1 tbsp orange zest

1-2 tsp poppy seeds


Steps:



1. Preheat oven to 370 degrees Fahrenheit.

2. Line the bottom of a 9x5 loaf pan with parchment paper and spray with cooking spray.

3. In a large bowl, combine first six ingredients.

4. Add in the remaining ingredients, except for the berries and white chocolate chips.

5. Stir in the berries and white chocolate chips.

6. Pour batter into the loaf pan, then top with a tablespoon granulated sugar. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

7. While the loaf cooks, prepare the glaze. To prepare, stir together all ingredients, adding additional powdered sugar or water to get your desired texture.

8. Allow loaf to cool completely, then remove from pan and top with glaze.
